Roasted Pepper Egg Basket

I don’t even need to write a proper recipe for this because it’s so simple. I like to make pepper basket eggs for breakfast on the weekends when I have a bit of time to relax in the mornings. It’s perfect with fresh hot coffee, oven warmed spelt toast and clementines. Just clean your peppers and cut off the tops. Massage the entire pepper with fresh chopped cilantro and lots of olive oil. Bake the peppers (without the egg) at about 350 on parchment paper. Bake until the peppers brown and crinkle a bit at the edges. Then crack an egg in each pepper, add a bit of additional oil to the exterior and top of each pepper and bake until egg is cooked through. (The cost of one of these beauties is approximately $0.31 each, based on my ingredient prices.)
