Creamy Jalapeño Potato Skins- $2.75 recipe/ $0.17 per potato skin

These are great for frugal entertaining at home. They’re the perfect finger food- savory, creamy, and portable- plus they only cost $0.17 each.

Ingredients- ($2.75 recipe/$0.17 per potato skin)

8 small Idaho potatoes ($1.11)

2 jalapeños ($0.36)

1 tbsp. butter ($0.15)

1/2 tsp. onion powder ($0.03)

1 tsp. chili powder ($0.05)

1 tbsp. fresh chopped cilantro ($0.05)

4 tbsp. mayonnaise ($0.52)

4 tbsp. mustard ($0.40)

Step by Step

1. Preheat oven to 400.

2. Wash and pierce your potatoes. Bake in the oven on a non-stick surface for about 40-50 minutes.

3. Let potatoes cool for a few minutes and then halve them and scoop out the flesh.

4. Combine the potato mixture with mayonnaise, jalapeno, mustard, butter, and all herbs except the fresh cilantro. Mix very well by hand.

5. Refill your potato halves with your well combined mixture, and bake the filled skins for an additional 10-15 minutes, just so that they get a nice golden brown.

Garnish with fresh cilantro and enjoy!

    1. Oh cool, let me know how they turn out! Thanks for checking out my recipe!!! I was thinking you could make them creamier by adding sour cream- there’s definitely a lot of spins you could put on them.

      1. First off, I LOVE Jalapeños!! We have them in my department 🙂 they are always on my nachos when I order them out. I will pick these items up today when I go to work later! I forwarded your recipe to my email so I can pull it up on my phone later 😀
I’m going to make this recipe tomorrow for lunch!! I will take pictures of the completed recipe and send it along with my reply! ❤️
This week I’m going to be blogging on the little handcranked washing machine that I use 🙂 my little apartment doesn’t have a washer or dryer so I had to ‘improvise and overcome!’ It is wonderful for small loads at a time. Stay tuned! And thank you for this great recipe! I can’t wait to dig into it 😀
