Sweet Potato Fried Rice- $1.87 recipe/ $0.46 serving)

I love fried rice, sometimes it just hits the spot. To turn this awesome veggie side dish into an entree just top with a couple of shrimp, some sliced avocado, or curried greens. If you don’t have a wok, just saute the ingredients in the largest pan that you have. Take care to add the oil little by little if you are not using a wok, you may not need as much as I use.

Ingredients makes 4 generous servings

2 cups (cooked) rice ($0.30)

1 sweet potato ($0.78)

1/2 cup cashews ($0.50)

3 tbsp. vegetable oil ($0.15)

1 tbsp. Bragg Liquid Aminos (or soy sauce) ($0.06)

2 cloves garlic ($0.06)

1/2 tsp. Chinese 5 Spice powder ($0.02)

1/4 cup water (free!)

Step by Step

1. Dice sweet potatoes and mince garlic. 

2. Saute sweet potatoes, cashews, Chinese 5 Spice, Braggs, and 2 tbsp. oil over high heat for 7 minutes. Stir regularly, add in a bit of water if necessary (1/4 cup should do it). 

3. Now mix in rice, garlic, and additional tbsp. oil. Turn heat to medium and cook for 5 minutes, stirring continually.   

That’s all there is to it!
