Weekend Cooking: Salmon, Zucchini Chips, Baked Eggs, and more!

Mmm, I will definitely be making this again! I marinated the salmon steaks, added yellow bell peppers and baked them in tinfoil. Salmon is expensive, so I buy frozen fillets from costco but of course fresh is much better if you can afford it. After making the salmon I sauteed brussels sprouts and minced sundried tomatoes in simmering balsamic vinegar. The zucchini chips were easy, I just oiled up, sprinkled them with Old Bay, and baked until crispy and delicious.

It’s salad season! I love loading up a plate of spinach (which is in season right now) with smoked salmon, hard boiled eggs, and my homemade dijon balsamic dressing.
