Enchiladas are always a good idea. I whipped up a simple batch filled with black beans, avocado, peppers, and corn. Then I drenched them in my homemade enchilada sauce and baked them. Frugal and delicious!
For Mother’s day I made a pecan pie. When my mom was pregnant with me, she was crazy for pecan pies. (Hi Mom!) I found the recipe in a 1973 copy of The Good Housekeeping Cookbook. Filled with sugar, shortening, and corn syrup, this pie is definitely not diet friendly- but it is delicious!
