This was a no brainer lunch recipe to make after I posted my signature meatballs. All I did differently was add freshly chopped basil into the meat, and pair it with some freshly sliced mozzarella and a nice roll. To pack these for lunch, I assemble each sandwich (3-4 meatballs per sandwich, extra sauce, and cheese) after the ingredients are cooled, and then wrap each sandwich in foil. You can eat these warmed up or room temperature, either way they are delicious. It’s easy to resist buying lunch out when you have one of these to look forward to! Of course, as always, you can double or even triple the recipe as needed.
