This easy burrito filling is perfect if you’re looking to add a delicious vegetarian meal into your weekly rotation. I cook vegetarian meals several times a week and it saves us a lot of money! This is also a great meal for people looking to branch out into cooking lentils and tofu, but aren’t sure where to start.
This unique burrito filling is smokey and delicious with a very slight kick. I add lots of hot sauce and a little sour cream to mine, but you could top yours with cilantro, chopped lettuce, lime juice, onions, cheese, salsa, or guacamole! I didn’t include my sour cream in the cost here since there are so many topping options, just be mindful of your choice if you’re seriously watching the budget. Lettuce would be a cheap and delicious choice!
Ingredients- (makes 7 large dinner sized burritos)
10 pack of flour tortillas ($2.29)
1 bell pepper (I used orange but any color will do) ($0.89)
1 poblano pepper ($0.39)
1 jalapeno pepper ($0.12)
1 tomato ($0.39)
1 can lentils ($1.18) (bagged would be cheaper, I was in a rush and forgot to soak mine)
1 package firm tofu ($2.49)
2 tsp. garlic powder ($0.04)
1 tsp. chili powder ($0.02)
1 tsp. old bay seasoning ($0.06)
2 drops liquid smoke (optional) ($0.08)
Step by Step-
1. Chop all of your peppers and your tomato. Toss into a saute pan, add a little water and heat over medium. Let simmer about 5 minutes.
2. Add in drained and rinsed can of lentils (or about a cup and half cooked from dry). Toss in all of your spices now and mix. Let simmer over medium heat for about 15 minutes, add water when needed (keep an eye on it). The lentils will get very soft and almost thicken.
